Jakob Eckl and his team are moving in!
Starting in December 2026, we are delighted to open a very special culinary chapter at the AEON HOTEL: Jakob and Mischa will be joining us to run an intimate and refined á la carte restaurant.
At the heart of the concept is an honest, modern cuisine that avoids unnecessary staging and instead focuses on high-quality ingredients, clear flavors, and craftsmanship with great attention to detail. The restaurant blends seamlessly into the calm and stylish atmosphere of AEON – a place where enjoyment, time, and ambiance take center stage.
Limited seating – reservations are recommended
Open Wednesday to Sunday – closed on Mondays and Tuesdays.
Breakfast Served Daily Until 12 PM
We love breakfast – because it’s the most beautiful way to start the day. In our bistro, early risers and late sleepers come together to take their time until noon and enjoy everything that lies between breakfast and brunch.
Every day, a carefully curated buffet awaits you, featuring the very best of regional produce and continental breakfast culture: freshly baked bread and pastries, fine spreads, seasonal fruits, cheeses, cold cuts, and delightful sweet treats. The selection is complemented by our AEON signature breakfast dishes and egg specialties, prepared and served with great attention to detail – honest, high-quality, and wonderfully satisfying.
Your breakfast experience is accompanied by a selection of aromatic coffees, fine teas, invigorating matcha, or even a glass of Prosecco for those special moments.
Whether on the sun-drenched terrace with views of the surrounding landscape or in the relaxed lounge area, this is where that unique feeling of Dolce Vita comes to life – where time slows down and the day begins gently, indulgently, and at its own pace.
Dining Out & Discovering the Local Area
Our own restaurant at AEON (from December 2026 onwards) intentionally offers only a limited number of seats. This creates an atmosphere of tranquillity, quality, and exclusivity – but it also means that a table may not always be available at short notice.
Yet this is exactly where the culinary experience beyond AEON begins.
Guests who are unable to secure a table with us, or who simply wish to explore the surrounding area, will find a surprisingly diverse selection of restaurants nearby. Oberbozen, just a five-minute drive away, is a charming culinary destination in its own right. With six very different venues to discover, there is something for every taste – from traditional rustic inns and relaxed pizzerias to sophisticated gourmet restaurants. We are happy to assist with reservations and personal recommendations in advance, ensuring that your evening begins in the most relaxed way possible.
And then there is Bolzano.
Dolce Vita in Bolzano? Absolutely – and it is only a short journey away.
The cable car takes you to the city quickly, effortlessly, and above all, free of charge. The ride itself is an experience, gliding above the landscape while enjoying breathtaking views along the way.
Especially on warm summer evenings, Bolzano has a very special charm: an aperitivo on a lively piazza, golden evening light reflecting between historic buildings, followed by dinner in one of the many trattorias or charming restaurants in the old town. It is authentic Italian lifestyle at its finest – relaxed, unhurried, and centred around the simple pleasure of enjoying life.
This makes every stay at AEON more than just a visit to our hotel; it becomes a culinary journey through the entire region.
